Ingredients:
- 3 eggs
- 1 banana
- 3 tablespoons cottage cheese
- 1 teaspoon maple syrup or liquid honey
- 1 dl (deciliter) fibra flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla powder
- 1/4 teaspoon cinnamon
Instructions:
- Mash the banana with a fork.
- Crack the eggs and mix them together with the mashed banana.
- Add the remaining ingredients and mix until you have a smooth batter.
- Cook the pancakes over medium heat in a dry non-stick frying pan. Pour a small amount of batter into the pan. If you have space to cook two at a time, go ahead. When the banana pancakes start to bubble slightly, they are ready to be flipped
