Banana Pancakes with Cottage Cheese

Ingredients:

  • 3 eggs
  • 1 banana
  • 3 tablespoons cottage cheese
  • 1 teaspoon maple syrup or liquid honey
  • 1 dl (deciliter) fibra flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla powder
  • 1/4 teaspoon cinnamon

Instructions:

  1. Mash the banana with a fork.
  2. Crack the eggs and mix them together with the mashed banana.
  3. Add the remaining ingredients and mix until you have a smooth batter.
  4. Cook the pancakes over medium heat in a dry non-stick frying pan. Pour a small amount of batter into the pan. If you have space to cook two at a time, go ahead. When the banana pancakes start to bubble slightly, they are ready to be flipped
