Protein pancakes with cottage cheese are a healthy and delicious alternative to regular pancakes. This recipe includes cottage cheese, which is a rich source of protein, along with plenty of eggs and a good amount of whole wheat flour.

Ingredients:
- 1 large container of cottage cheese
- 4 eggs
- 2 tbsp of honey
- 1/2 dl of liquid butter
- 2.5 dl of almond milk, oat milk or regular milk
- 1 dl of whole wheat flour
- 2 dl of all-purpose flour
- 1 tsp of salt
- 1 tsp of baking powder
- 2 tsp of vanilla sugar
How to:
- Start by combining whole wheat flour, all-purpose flour, salt, baking powder, and vanilla sugar in a baking bowl.
- In another bowl, blend the cottage cheese until it’s completely smooth using a blender. Then, add the eggs, honey, and liquid butter.
- Add milk and mix well until the mixture is smooth.
- Gradually add the wet mixture to the dry ingredients while stirring until you have a smooth pancake batter.
- Heat a non-stick frying pan over medium heat.
- Pour a small ladleful of pancake batter into the pan and cook the pancake until it begins to bubble on the surface (about 2-3 minutes on each side), or until they are golden brown and cooked through. Do not use oil or butter, just dry pan.
- Repeat the process with the remaining batter until you have made all the protein pancakes.
- Serve the protein pancakes with your favorite toppings, such as fresh berries, bananas, or a drizzle of extra honey.
