Protein pancakes with cottage cheese

Protein pancakes with cottage cheese are a healthy and delicious alternative to regular pancakes. This recipe includes cottage cheese, which is a rich source of protein, along with plenty of eggs and a good amount of whole wheat flour.

Ingredients:

  • 1 large container of cottage cheese
  • 4 eggs
  • 2 tbsp of honey
  • 1/2 dl of liquid butter
  • 2.5 dl of almond milk, oat milk or regular milk
  • 1 dl of whole wheat flour
  • 2 dl of all-purpose flour
  • 1 tsp of salt
  • 1 tsp of baking powder
  • 2 tsp of vanilla sugar

How to:

  1. Start by combining whole wheat flour, all-purpose flour, salt, baking powder, and vanilla sugar in a baking bowl.
  2. In another bowl, blend the cottage cheese until it’s completely smooth using a blender. Then, add the eggs, honey, and liquid butter.
  3. Add milk and mix well until the mixture is smooth.
  4. Gradually add the wet mixture to the dry ingredients while stirring until you have a smooth pancake batter.
  5. Heat a non-stick frying pan over medium heat.
  6. Pour a small ladleful of pancake batter into the pan and cook the pancake until it begins to bubble on the surface (about 2-3 minutes on each side), or until they are golden brown and cooked through. Do not use oil or butter, just dry pan.
  7. Repeat the process with the remaining batter until you have made all the protein pancakes.
  8. Serve the protein pancakes with your favorite toppings, such as fresh berries, bananas, or a drizzle of extra honey.
